What better way to start the build up to Christmas than with a comforting slice of this apple and raspberry pie! Raspberries, although not a seasonal fruit right now, make this dish heavenly sweet, beautifully combined with apples represents real comfort food.
The recipe is super simple, as I use pre-made shortcrust pastry, and the filling takes 5 minutes to prepare. Beautiful, simple and oh so delicious!
2 rolls of Shortcrust pastry
3 Bramley cooking apples (2x sliced thinly and 1x diced)
60g of frozen raspberries
50g brown sugar
1) Preheat the oven to 180°. Line a pastry baking dish with one sheet of shortcrust pastry, making sure to use a knife to cut off any extra pastry that surrounds the side.
2) Next add the diced apple, sugar and raspberries to a pan, and allow to simmer for 3 minutes until a coulee style mixture is formed. Turn the heat off and allow to cool.
3) Whilst the filling is cooling, place the sliced apples on the bottom of the lined pastry.
4)Once cooled sufficiently, spoon the filling mixture on top of the apple layer, ensuring to cover the base evenly. Next add the final apple slices onto the top of the filling mixture.
5) Add the second roll of pastry on top of the filling, enclosing the pie. Bake for 45 minutes.
6) Best served warm, enjoy!
